Half Crustless Quiche
- 1/4 c Butter
- 5 Eggs
- 1/4 c Flour
- 1/2 tsp Baking powder
- 1/2 lb Cheese- cottage, large curd
- 1/2 lb Cheese- cheddar, mild
- Melt the butter. Whip the eggs until fluffy, and add the flour, baking powder, salt, cottage cheese, melted butter, and half the mild cheese.
- Add any flavorings or ingredients such as 8 ounces ham or mushrooms or spinach
- Place the mixture in a greased deep dish pie plate.
- Top with the remaining grated cheese.
- Bake at 400 degrees Fahrenheit for 15 minutes. Then reduce temperature to 350 degrees Fahrenheit, and continue to bake for 25 to 30 minutes, or until the top is lightly browned.
- Cool, and cut into wedges for serving.
Some flavor combinations:
- bacon and swiss for Quiche Lorraine
- ham and swiss
- spinach and mushrooms
- potatoes and onion
